Pan-Seared Scallops (90 Seconds Per Side)
By Ryan Thomas · Fine-Dining Chef · Updated 2026-05-08
8 large dry-pack sea scallops seared in butter for 90 seconds per side. Salt only. The 4-minute restaurant-grade carnivore dish at $5 per scallop.

Carnivore pan-seared scallops are 8 large U-10 dry-pack sea scallops (about 1 to 1.5 ounces each) salted and seared in 2 tablespoons of butter over high heat for 90 seconds per side until the exterior is deeply golden-brown and the interior remains slightly translucent in the very center. Salt is the only seasoning. The two non-negotiables are dry-pack scallops (never wet-pack with sodium phosphate, which prevents browning) and a screaming-hot pan (otherwise the scallops steam instead of crusting). A 4-scallop serving delivers 24g protein, 12g fat, and 220 calories. Dry-pack U-10 scallops cost $25 to $40 per pound; 8 large scallops run $12 to $20. Total cook time is 3 minutes start to plate. Scallops cook fast and overcook even faster — pull at the 90-second mark per side without exception. Restaurant-grade scallops at $25 per plate use exactly this technique. The home-cook version costs $5 per scallop in raw cost, comparable to ordering at a moderate restaurant.

Instructions
- 1
Remove the small side-muscle (the rectangular tab) from each scallop if it's still attached.
- 2
Pat scallops completely dry with paper towels — wet scallops won't sear, they'll steam.
- 3
Salt both sides with 1 tsp coarse salt total.
- 4
Heat a 12-inch cast iron skillet over high heat for 4 minutes until smoking.
- 5
Add 2 tbsp butter. As soon as it foams (don't let it brown past golden), add the scallops in a single layer with space between each.
- 6
Sear 90 seconds WITHOUT moving. The bottom should be deeply golden when ready to flip.
- 7
Flip each scallop. Sear the second side 90 seconds.
- 8
Pull from pan immediately. The interior should be slightly translucent in the very center; the exterior should have a dark brown crust. Plate immediately.

Frequently Asked Questions
Dry-pack vs wet-pack scallops?
Dry-pack always for searing. Wet-pack scallops are soaked in sodium phosphate solution to extend shelf life — the chemical absorbs water and the scallops won't brown when seared (they steam instead). Dry-pack scallops are not chemically treated and brown beautifully. Most quality fish counters carry both; ask which one you're buying. Dry-pack costs $5 to $10 more per pound but is non-negotiable for proper searing technique.
What does 'U-10' mean?
U-10 is the size grade meaning '10 or fewer scallops per pound' — so each scallop weighs 1.6 ounces or more. These are the largest sea scallops available. U-12 (12 per pound) and 20-30 (smaller bay scallops) are also common but require shorter cook times (45 to 60 seconds per side instead of 90). For showcase searing, U-10 is the standard. Smaller scallops work fine but the dish is harder to time and the per-scallop crust ratio shifts.
Why do my scallops never sear properly?
Three common causes. First, wet-pack scallops (chemical pre-treatment prevents browning). Second, scallops not patted dry before salting. Third, pan not hot enough — the skillet should smoke before the butter goes in. Bonus issue: salting too far in advance pulls moisture from the scallops onto the surface, making them wet again. Salt right before searing, not 10 minutes ahead. All three fixes are technique, not ingredient quality.
